Try these delectable Italian biscotti - crispy and chewy perfection in every bite!
Ingredients:
  • 100g hazelnuts
  • 50g good-quality dark chocolate, chopped
  • 2 eggwhites
  • 110g caster sugar
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays by lining them with baking paper.
  • Finely chop the nuts and chocolate in a food processor, being cautious not to over-process the nuts.
  • Whip egg whites and a pinch of sugar in a clean bowl until soft peaks form using electric beaters. Gradually add the rest of the sugar while beating until the mixture becomes thick and shiny. Finally, delicately fold in the nuts and chocolate.
  • Spoon mounds of the mixture onto the trays, leaving ample space between each. Place in the oven, then shut it off right away. Let the biscuits sit undisturbed in the cooling oven overnight to crisp up. Store in an airtight container for 2-3 days.
