Whip up a delicious gnocchi salad with pesto, prawns, and veggies in just 10 minutes!
Ingredients:
  • 500g packet gnocchi
  • 36.40 gm extra virgin olive oil
  • 80g green beans, trimmed
  • 2 x 35g sachets basil pesto finishing drizzle
  • 42.00 gm lemon juice
  • 120g bag baby French kale leaves
  • 500g cooked king prawns, peeled, deveined, tails intact
  • 200g punnet perino duet tomatoes, halved
  • 4 red radishes, sliced
Instructions:
  • Boil gnocchi in seasoned water until they float to the surface. Drain.
  • In a large frying pan over high heat, heat oil. Cook gnocchi for 2 to 3 minutes until golden brown, stirring occasionally. Remove from heat, season with salt and pepper, and let cool for 5 minutes.
  • Place the beans in a bowl and cover them with boiling water for 2 minutes. Drain the beans and mix them with the pesto and lemon juice.
  • Combine gnocchi, beans, kale, prawns, tomato, and radish in a bowl. Serve in individual bowls and top with pesto dressing.
