Create a delicious and affordable dinner by combining Caprese salad flavors with gnocchi and tuna.
Ingredients:
  • 500g packet gnocchi
  • 425g can tuna in oil, oil reserved, flaked
  • 1 red onion, finely chopped
  • 4 garlic cloves, crushed
  • 1 long red chilli, seeded, thinly sliced
  • 20.00 ml drained baby capers, rinsed
  • 400g tomato medley mix, halved
  • 1/2 x 220g tub bocconcini, drained, torn
  • 125.00 ml fresh basil leaves
Instructions:
  • Boil gnocchi in a large saucepan of salted, boiling water according to package instructions. Drain cooked gnocchi.
  • Heat the oil from the tuna in a large frying pan over medium-high heat. Sauté onion, garlic, and chili for 5 minutes until the onion softens. Stir in capers and cook for 1 additional minute until fragrant.
  • - Begin by tossing in the bright, juicy tomatoes and cook for 1 minute until warmed. - Next, stir in the gnocchi, flaky tuna, and a drizzle of olive oil. Mix gently over low heat for 2 minutes until everything is heated through. - Add in the creamy bocconcini and some fresh basil leaves, saving some for later. Season with salt and pepper, then gently combine everything. - Sprinkle the remaining basil over the top and serve up your delicious creation.
