Try delightful baked eggs in avocado with smoked salmon for a fabulous breakfast.
Ingredients:
  • 3 avocados, halved, seeds removed
  • 6 slices smoked salmon
  • 6 large eggs
  • 40.00 ml plain Greek-style yoghurt
  • 20.00 ml chopped fresh chives, plus extra sprigs to serve
  • Extra virgin olive oil, to drizzle
  • Coles bakery LOW GI seeds & grains Vienna loaf, to serve
Instructions:
  • Preheat your oven to 220C/200C fan-forced and prepare a baking tray lined with baking paper.
  • Hollow out avocado and place on tray. Line with smoked salmon, crack an egg into each, season, and bake until whites are set, about 12-15 minutes. Serve with reserved avocado flesh on the side.
  • Blend the avocado flesh, yogurt, and lemon juice until smooth. Season with salt and pepper, then gently fold in the chives.
  • Sprinkle baked eggs generously with fresh chives, then drizzle with a fragrant olive oil. Serve alongside a creamy avocado mixture and warm, crusty bread.
