Baked eggs with chives and feta

Lighten up breakfast with a tasty dish of baked eggs with chives and feta.
Ingredients:
  • Vegetable oil, to grease
  • 8 eggs
  • 125ml (1/2 cup) extra-light thickened cream
  • 40g 97 per cent reduced-fat feta, crumbled
  • 2 green shallots, ends trimmed, thinly sliced
  • 62.50 ml finely chopped fresh chives
  • Salt & freshly ground black pepper
  • Toasted wholemeal bread, cut into fingers, to serve
Instructions:
  • 1. Preheat your oven to 200°C. 2. Grease eight 125ml (1/2-cup) ovenproof dishes with oil. 3. Crack an egg into each dish. 4. Divide the cream evenly among the dishes. 5. Top with feta, shallot, and chives. 6. Season with salt and pepper to taste before baking.
  • Arrange dishes on a baking tray and bake in a preheated oven for 10 minutes or until eggs reach your desired doneness. Serve promptly with toast fingers.
