Whip up this juicy chargrilled chicken with corn and avocado salsa in just 15 minutes for a burst of delicious flavors!
Ingredients:
  • 4 small Australian Chicken Breast Fillets
  • 20.00 gm Cajun seasoning
  • 36.40 gm olive oil
  • 2 corn cobs, husks and silks removed
  • 1 avocado, stoned, peeled, finely chopped
  • 1 tomato, finely chopped
  • 1 small red onion, finely chopped
  • 1 long green chilli, thinly sliced (optional)
  • 1 lime, juiced
  • 450g pkt microwavable long-grain rice
  • 400g can black beans, rinsed, drained
Instructions:
  • Make three deep cuts in the top of each chicken breast using a sharp knife, being careful not to cut all the way through. Place the chicken breasts in a bowl with Cajun seasoning and oil, then toss to mix well.
  • Preheat a greased chargrill over high heat. Grill chicken for 6 minutes on each side, or until fully cooked. Transfer to a serving plate.
  • Grill the corn until charred, then cut the kernels off. Combine in a bowl with avocado, tomato, onion, optional chili, lime juice, and seasonings. Mix well.
  • Cook the rice according to package instructions while the corn is cooking. Combine the cooked rice with beans in a bowl, mixing well. Serve the rice and bean mixture on individual plates and garnish with chicken and avocado salsa.
