Succulent Cajun chicken pasta with tender chicken, bell peppers, and mushrooms in a spicy cream sauce.
Ingredients:
  • 4 ounces linguine pasta
  • 2 skinless, boneless chicken breast halves
  • 2 teaspoons Cajun seasoning
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 4 fresh mushrooms, sliced
  • 1 green onion, chopped
  • 1 cup heavy cream
  • 0.25 teaspoon dried basil
  • 0.25 teaspoon lemon pepper
  • 0.25 teaspoon salt
  • 0.125 teaspoon garlic powder
  • 0.125 teaspoon ground black pepper
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Boil a large pot of salted water. Cook pasta until al dente, about 8-10 minutes. Drain.
  • Slice the chicken breast into strips, then combine the strips with Cajun seasoning in a plastic bag. Shake the bag to ensure the chicken is evenly coated with the seasoning.
  • In a large skillet over medium heat, melt the butter until sizzling. Add the chicken and cook, stirring occasionally, until beautifully browned and nearly cooked through, about 5 to 7 minutes.
  • Sauté bell peppers, mushrooms, and green onion in a hot skillet for 2 to 3 minutes, stirring frequently.
  • Lower the heat and gently mix in cream, fresh basil, zesty lemon pepper, salt, garlic powder, and savory black pepper. Warm the mixture. Then, incorporate cooked linguine, combine well, and warm through.
  • Finish off with a generous dusting of Parmesan before presenting.
