Flavorful Cajun chicken pasta salad with creamy chipotle dressing.
Ingredients:
  • 160g (2/3 cup) Kewpie Mayonnaise
  • 40.00 gm crème fraîche
  • 2 tsp chipotle sauce
  • 15.00 gm Cajun seasoning
  • 300g dried penne pasta
  • 500g small Free Range Chicken Breast
  • 1 small red capsicum, deseeded, chopped
  • 1 small green capsicum, deseeded, chopped
  • 2 green shallots, trimmed, thinly sliced
  • Fresh continental parsley leaves, to serve
Instructions:
  • In a large serving bowl, mix together the mayonnaise, crème fraîche, chipotle sauce, and 1 tablespoon of seasoning until well combined.
  • Boil the pasta in a large saucepan until al dente following the instructions on the packet. Drain and cool under cold running water.
  • Next, spread the leftover 2 teaspoons of seasoning on a plate before adding the chicken and pressing it down to coat evenly.
  • In a large non-stick frying pan, heat oil over medium-high heat. Cook chicken for 6 minutes on each side until just cooked through. Transfer to a plate and let it rest for 5 minutes before slicing.
  • Add the pasta, capsicum, half of the chicken, and half of the shallot to the creamy mayonnaise mixture. Toss everything together until well combined. Top with the remaining chicken and shallot, season to taste, and garnish with fresh parsley before serving.
