Tender chicken thighs in a mild and creamy Instant Pot® sauce served over pasta, perfect for a family meal.
Ingredients:
  • 4 tablespoons unsalted butter, divided
  • 1 tablespoon avocado oil
  • 1.5 pounds boneless, skinless chicken thighs
  • 1 teaspoon dried basil
  • 0.5 teaspoon garlic powder
  • 1.25 cups chicken bone broth
  • 3 cloves garlic, minced
  • 3 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 0.25 teaspoon cayenne pepper
  • 3 tablespoons all-purpose flour
  • 1 cup heavy cream
  • 1 cup chopped roasted red peppers
  • 6 leaves fresh basil, or to taste
Instructions:
  • Preheat your Instant Pot® on the Saute function. Once hot, add 1 tablespoon of butter and avocado oil to coat the bottom. Let the remaining 3 tablespoons of butter soften at room temperature.
  • Add the chicken thighs to the pot and generously season with basil and garlic powder. Sear for 3 minutes on each side until beautifully browned. Then, transfer the chicken to a plate.
  • Add the broth to the pot and bring it to a boil, while using a wooden spoon to scrape off the flavorful browned bits. Stir in garlic, Cajun seasoning, paprika, and cayenne. Lastly, return the chicken to the pot and turn off the Saute setting.
  • Seal the lid securely, then set the pressure to high following the manufacturer's guidelines. Cook on high pressure for 6 minutes and let the pressure naturally release for 10 to 15 minutes before opening.
  • Following the manufacturer's instructions, allow the pressure to release naturally for 5 minutes. Afterward, carefully release any remaining pressure using the quick-release method for about 5 minutes. Unlock the lid and transfer the chicken thighs to a plate.
  • Combine softened butter and flour in a small bowl. Use the Saute function and once the sauce starts to simmer, whisk in the butter-flour mixture until sauce thickens. Stop the Saute function.
  • Pour in luxurious heavy cream and add flavorful roasted red peppers. Cut tender chicken thighs into slices and place back into the pot. Finish with a sprinkle of savory Parmesan cheese and fresh basil leaves for a touch of elegance.
