Instant Pot® Orzo Risotto: A quick twist on the classic using creamy orzo instead of arborio rice, no stirring required.
Ingredients:
  • 2 tablespoons butter
  • 0.75 cup orzo
  • 2 cups chicken stock, divided
  • 2 ounces sliced fresh mushrooms
  • 1 cup finely grated Parmesan cheese
  • 0.5 teaspoon garlic salt
  • 0.25 teaspoon dried crushed rosemary
Instructions:
  • Preheat a multi-functional pressure cooker (such as Instant Pot®) by selecting the Saute function. Melt butter and saute garlic until fragrant, about 1 minute. Add orzo and 1 1/2 cups chicken stock, mix well. Switch off the Saute function. Lock the lid, set to high pressure following manufacturer's instructions, and set timer for 6 minutes. Allow pressure to build for 10 to 15 minutes.
  • Carefully release pressure following the quick-release method per the manufacturer's instructions for about 5 minutes. Unlock and remove the lid, then stir in mushrooms and switch to Saute mode.
  • Fold in the Parmesan cheese, garlic salt, and rosemary. Gradually incorporate the remaining 1/2 cup chicken broth, 1 tablespoon at a time, until the orzo becomes creamy, approximately 3 minutes.
