Instant Pot® Chicken Casserole: Indulge in a creamy comfort dish with frozen chicken, spaghetti, Cheddar cheese, and mushroom soup - no defrosting needed!
Ingredients:
  • 0.5 cup chopped onion
  • 1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
  • 2 (6 ounce) frozen chicken breasts
  • 10 ounces spaghetti, broken in half
  • 1 (10.5 ounce) can low-sodium cream of mushroom soup
  • 1 (10.5 ounce) can low-sodium cream of chicken soup
  • 0.5 cup milk
  • 1 teaspoon taco seasoning mix
  • 0.5 teaspoon chicken seasoning salt (such as Chook®)
  • nonstick cooking spray
  • 2 cups shredded Cheddar cheese
Instructions:
  • Start by heating up your multi-functional pressure cooker, like the Instant Pot®, and choose the Saute function. Saute butter and onion for roughly 3 minutes. Next, pour in diced tomatoes with their liquid and stir to combine. Now, add the frozen chicken breasts and then turn off the Saute mode.
  • Secure the lid tightly. Choose High pressure as per the manufacturer's guidelines and set the timer for 20 minutes. Allow the pressure to build for 10 to 15 minutes.
  • Vent steam gently following the quick-release technique as per the manufacturer's guidance for approximately 5 minutes. Unseal and lift the lid. Slice the chicken into bite-sized pieces. Return the chicken to the pot. Sprinkle noodles on top to prevent sticking together.
  • Combine mushroom soup, chicken soup, and milk in a bowl, then pour over noodles. Seal the lid, select High pressure, and set the timer for 7 minutes following the manufacturer's instructions. Allow 10 to 15 minutes for pressure to build.
  • Once pressure has been safely released following the manufacturer's instructions for about 5 minutes, unlock and remove the lid. Mix in taco seasoning and chicken seasoning salt.
  • Position the oven rack 6 inches from the heat source and preheat the broiler. Grease an 8x12-inch casserole dish with cooking spray.
  • Layer half of the spaghetti mixture into the casserole dish, then sprinkle with a half cup of cheese. Top with the rest of the spaghetti mixture and finish by sprinkling with the remaining one and a half cups of cheese.
  • Place your dish in the preheated oven and broil until the cheese is bubbling and golden, for about 3 to 5 minutes.
