Spicy jerk chicken Alfredo penne made effortlessly in the Instant Pot®.
Ingredients:
  • 0.5 cup chopped red bell pepper
  • 0.5 cup chopped green bell pepper
  • 0.5 cup chopped onion
  • 2 (6 ounce) boneless, skinless chicken breasts
  • 1.5 tablespoons jerk seasoning, divided
  • 2 cups penne pasta
  • 1 cup water
  • 0.75 cup whipping cream, or more as needed
  • 1 teaspoon garlic base (such as Better Than Bouillon® Roasted Garlic Base)
  • 1.5 cups finely shredded Parmesan cheese
Instructions:
  • Preheat Instant Pot® on Saute function and melt butter. Add red bell pepper, green bell pepper, and onion. Cook until soft and fragrant, around 5 minutes.
  • Slice each chicken breast horizontally to create two thin fillets. Cut each fillet into diagonal strips and sprinkle with 1 1/2 teaspoons of jerk seasoning. Add to the Instant Pot® and cook for 5 minutes. Turn off the Saute function and stir in penne, water, whipping cream, and garlic base.
  • Seal and secure the lid, then set to high pressure following the manufacturer's guidelines. Adjust timer to 15 minutes. Wait for 10 to 15 minutes for pressure to build up.
  • Once the pressure has been released using the quick-release method as per the manufacturer's instructions, carefully unlock and remove the lid. Combine the remaining jerk seasoning and Parmesan cheese, stirring until thoroughly mixed. If desired, add up to an additional 1/4 cup of cream to achieve your preferred consistency.
