Quick and flavorful vegan carrot soup with curry paste and cilantro made effortlessly in an Instant Pot®.
Ingredients:
  • 8 carrots, chopped
  • 2 cups vegetable broth
  • 1 (14 ounce) can coconut milk
  • 4 cloves garlic, peeled
  • 1 tablespoon red curry paste
  • 2 teaspoons salt
  • 2 tablespoons chopped cilantro
Instructions:
  • In a multi-functional pressure cooker, mix together carrots, vegetable broth, coconut milk, onion, garlic, curry paste, salt, and pepper. Seal the lid, set to high pressure for 15 minutes following the manufacturer's instructions, and allow pressure to build for 10 to 15 minutes.
  • Allow the pressure to naturally release for 10 to 40 minutes following the manufacturer's instructions. Once done, unlock and remove the lid. Use an immersion blender to blend the soup until smooth and creamy, about 3 minutes. Serve in bowls and garnish with fresh cilantro.
