Hearty, delicious stew that's paleo-friendly.
Ingredients:
  • 2 tablespoons olive oil
  • 2 pounds cubed beef stew meat
  • salt and ground black pepper to taste
  • 2 jalapeno peppers, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon minced fresh ginger root
  • 4 tablespoons curry powder
  • 2 cups beef broth
  • 1 (28 ounce) can fire-roasted diced tomatoes
  • 1 pound Yukon Gold potatoes
  • 3 carrots, sliced
  • 1 large onion, sliced
Instructions:
  • Preheat a multi-functional pressure cooker like Instant Pot® on Saute mode. Add olive oil and heat until sizzling. Season meat with salt and pepper, then brown each side for 5 to 7 minutes.
  • Place the meat on a plate, keeping the tasty juices in the pot. Introduce jalapenos, garlic, and ginger to the pot. Sauté until fragrant and soft, approximately 2 minutes. Sprinkle with curry powder for a burst of flavor.
  • Add half of the delicious beef broth to the pot, and use a wooden spoon to scrape up those flavorful brown bits from the bottom. Then, put the meat back in the pot along with the rest of the beef broth, tomatoes, potatoes, carrots, and onion. Secure the lid tightly.
  • Choose the high-pressure setting as per the manufacturer's directions and program the timer for 35 minutes. Let the pressure build for 10 to 15 minutes.
  • Follow the manufacturer's instructions to naturally release pressure for 10 minutes. Then, carefully quick-release any remaining pressure following the manufacturer's instructions for about 5 minutes. Unlock and remove the lid.
