Instant Pot pork chops cooked in creamy mushroom gravy with a hint of white wine for a delicious and comforting family meal.
Ingredients:
  • 1 tablespoon avocado oil, or more as needed
  • 5 bone-in pork chops, trimmed of fat
  • 0.25 teaspoon ground black pepper
  • 1 large clove garlic, finely chopped
  • 0.25 cup dry white wine
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1.25 cups water
  • 0.25 cup water
  • 2 tablespoons all-purpose flour
  • 1 teaspoon low-sodium soy sauce (such as Bragg®)
Instructions:
  • Heat some oil in the pot of your Instant Pot® on the Saute function.
  • Season pork chops generously with freshly ground black pepper. Pan-fry 2 to 3 chops in hot oil until beautifully browned on both sides, about 7 to 8 minutes. Transfer to a plate, then repeat with the remaining chops, placing them alongside the others.
  • Sauté garlic until aromatic, for about 30 seconds. Pour in wine to deglaze the pot, scraping up any browned bits. Let the sauce simmer until reduced by half, about 5 to 7 minutes.
  • Combine mushroom soup and 1 1/4 cups water with the sauce in a pot. Simmer until smooth for about 3 minutes. Add the seared pork chops and coat them with the mixture. Lock the lid, select high pressure, and set the timer for 18 minutes following the manufacturer's instructions. Allow pressure to build for 10 to 15 minutes.
  • Once the pressure subsides naturally, following the manufacturer's guidelines, for roughly 10 minutes, retrieve the chops from the pot.
  • Combine 1/4 cup water and flour, then pour into the pot. Use the Saute function until the gravy thickens (about 3 minutes). Stir in soy sauce, then add back the chops and coat them evenly.
