Instant Pot creamy pork chops with onion and mushrooms in a deliciously creamy sauce made quick and easy with canned soup.
Ingredients:
  • 2 pounds bone-in pork chops
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • salt and freshly ground black pepper to taste
  • 1 onion, diced
  • 1 pound mushrooms, cleaned and sliced
  • 1 1/4 cup chicken broth, divided
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 2 tablespoons cornstarch
Instructions:
  • Preheat a large nonstick skillet over medium-high heat and add olive oil. Season the chops with garlic powder, salt, and pepper on both sides. Sear the chops in the hot skillet until golden brown, about 2 to 3 minutes per side.
  • After searing the chops, generously pour 1 cup of broth into a multi-functional cooker like an Instant Pot®. Layer in the onions and mushrooms, then place the seared chops on top. Pour over the creamy mushroom soup. Seal the lid securely. Choose the high-pressure setting as per the manufacturer's guidelines and set the timer for 15 minutes. Let the pressure naturally build up for 10 to 15 minutes.
  • Allow the pressure to naturally release for a minimum of 10 minutes following the manufacturer's instructions. Then, carefully perform a quick-release for about 5 minutes according to the manufacturer's guidelines. Unlock and remove the lid.
  • Take the chops out of the liquid and keep them warm. Whisk cornstarch with 1/4 cup broth until smooth, then stir into the mixture in the Instant Pot. Switch on the sauté function and let it simmer, whisking occasionally until it thickens. Serve the chops with a generous spoonful of mushroom and onion sauce.
