Creamy Instant Pot cabbage soup with sausage, potatoes, and onion cooks in 30 minutes for a comforting meal.
Ingredients:
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 1 pound sage pork sausage
  • 1 cup water
  • 1 teaspoon chicken soup base (such as Better than Bouillon®)
  • 1 russet potato, diced
  • 2 cups chopped cabbage
  • 1 pinch garlic salt, or to taste
  • 1 pinch ground allspice
  • ground black pepper to taste
  • 0.5 cup milk, divided
  • 0.5 cup half-and-half, divided
  • 2 tablespoons all-purpose flour
  • 2 teaspoons chopped fresh dill, or to taste
Instructions:
  • Preheat your Instant Pot using the Sauté function. Melt butter in the pot and sauté the onion until browned. Transfer to a plate. Cook sausage until crumbly and browned, around 5 minutes.
  • Combine water and chicken soup base with the sausage in the pot. Add back the onion. Mix in potato, cabbage, garlic salt, allspice, and pepper. Seal the lid securely and set the pressure cooker to high pressure for 8 minutes following the manufacturer's guidelines. Allow pressure to build for 10 to 15 minutes.
  • Carefully release pressure using the quick-release method following the manufacturer's instructions, for about 5 minutes. Then unlock and remove the lid before selecting the Sauté function again.
  • Mix together milk and half-and-half in a small bowl. Reserve 3 tablespoons of the mixture and pour the rest into the pot. Whisk flour into the 3 tablespoons of reserved milk mixture until smooth, then pour it into the soup. Heat through, season to taste, and top with fresh dill before serving.
