Make creamy one-pot Instant Pot penne pasta with chicken for a speedy and delicious mid-week meal.
Ingredients:
  • 0.5 tablespoon olive oil
  • 0.5 tablespoon butter
  • 1 pound chicken breast, cubed
  • 1 cup diced leek (white and light green only)
  • 2 garlic, chopped, or more to taste
  • 1 tablespoon Italian seasoning
  • 0.25 teaspoon ground black pepper
  • 1 pinch red pepper flakes
  • 1.5 cups chicken broth
  • 0.25 cup dry white wine
  • 0.66666668653488 cup heavy whipping cream
  • 1 egg yolk
  • 8 ounces penne pasta
  • 1 cup shredded Parmesan-Romano cheese blend
  • 1 pinch cornstarch
  • 1 ounce cream cheese, cubed
  • 0.5 cup milk, or more as needed
  • 1 pinch salt and freshly ground black pepper to taste
Instructions:
  • Preheat a multi-functional pressure cooker like an Instant Pot on the Saute setting. Melt butter with oil and brown chicken on all sides for 5 to 8 minutes. Stir in leek and garlic, then season with Italian seasoning, salt, pepper, and red pepper flakes. Cook for an additional 3 to 5 minutes.
  • Deglaze the pot by pouring in chicken broth and wine. Bring to a simmer while scraping off the browned bits from the bottom.
  • Combine cream and egg yolk in a small bowl until fully mixed. Pour the mixture into the Instant Pot, then gently add pasta, ensuring it floats on top without clumping together. Press the pasta slightly down into the liquid. Seal the lid and set to high pressure for 1 minute following the manufacturer's guidelines. Allow pressure to build for 10 to 15 minutes.
  • Allow pressure to naturally release for 10 minutes, then carefully quick-release any remaining pressure for about 5 minutes following the manufacturer's instructions.
  • Combine the Parmesan-Romano cheese mixture and a pinch of cornstarch in a bowl. Open the Instant Pot lid and add the cheese mixture and cream cheese. Gradually pour in milk until the sauce is creamy to your liking. Stir well to achieve a smooth cream sauce.
