Instant Pot Creamy Lemon Chicken Pasta

Quick and easy Instant Pot lemon chicken pasta with creamy cheese sauce. Great for dinner and even better as leftovers for lunch.
Ingredients:
  • 2 tablespoons salted butter
  • 1.5 pounds boneless, skinless chicken breast, cut into 1/2-inch pieces
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound dry penne pasta
  • 4 cups chicken stock
  • 2 medium lemons, juiced
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 teaspoon garlic powder
  • 0.5 cup heavy whipping cream
  • 0.25 cup grated Romano cheese
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Preheat Instant Pot on Saute mode, melt butter, and brown chicken with onion for about 5 minutes. Stir in garlic and saute for 1 more minute. Cancel Saute mode.
  • Combine dried pasta, savory chicken stock, zesty lemon juice, a pinch of salt, a dash of pepper, and aromatic garlic powder in the pot. Stir the ingredients with a wooden or plastic spoon, making sure to scrape the bottom of the pot to release any flavorful browned bits.
  • Securely close and lock the lid. Choose high pressure setting as per manufacturer's guidelines, then set the timer for 5 minutes. Wait for 10 to 15 minutes for the pressure to build up.
  • Follow manufacturer's instructions to quickly release pressure, then carefully unlock and remove the lid after about 5 minutes.
  • Combine heavy cream with a blend of Romano and Parmesan cheeses. Allow the pasta to rest in the pot until the sauce thickens, roughly 3 minutes.
