Keto-friendly Instant Pot pumpkin and pork soup with cream, bursting with fall flavors.
Ingredients:
  • 0.5 pound pork sausage
  • 1 (15 ounce) can pumpkin puree
  • 3 cups chicken broth
  • 0.33333334326744 cup heavy cream
  • 0.75 teaspoon salt, or to taste
  • 0.5 teaspoon crumbled dried sage
  • 0.25 teaspoon granulated garlic
Instructions:
  • Preheat a multi-functional pressure cooker (such as Instant Pot) by selecting the Saute function. Melt butter, then add sausage and chopped onion. Cook until sausage is crumbled and onions are browned, around 5 minutes. Mix in pumpkin and 1 cup of chicken broth. Gradually stir in the remaining 2 cups of chicken broth, adding 1 cup at a time. Close and lock the lid, then switch off the Saute function.
  • Choose the Soup setting as per manufacturer's directions and set the timer for 10 minutes. Give it 10 to 15 minutes for pressure to build up.
  • Carefully release pressure using the quick-release method as per manufacturer's instructions for about 5 minutes. Unlock and remove the lid, then stir in cream, salt, sage, and garlic. Serve immediately.
