Garlicky broth with tender chicken and kale in a flavorful Instant Pot stew - keto-friendly!
Ingredients:
  • 0.5 onion, chopped
  • 2 boneless chicken breasts, diced
  • 1 (14.5 ounce) can diced tomatoes
  • 3 cups chopped kale
  • 1 cup chicken broth
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon oregano
  • 0.25 teaspoon ground black pepper
Instructions:
  • Preheat a multi-functional pressure cooker, like an Instant Pot, on the Sauté function. Add butter, onion, and cook until soft, about 3 minutes. Next, add chicken and cook until crispy, about 5 minutes. Add diced tomatoes, kale, chicken broth, salt, garlic powder, oregano, and black pepper. Seal the lid, select high pressure, and set the timer for 10 minutes. Allow pressure to build for 10-15 minutes.
  • Follow the manufacturer's instructions to release pressure naturally for about 10 minutes. Then, carefully release any remaining pressure quickly for about 5 minutes before unlocking and removing the lid.
