Instant Pot® pineapple teriyaki pork chops - quick and easy dinner.
Ingredients:
  • 1.5 pounds bone-in center-cut pork chops
  • 0.75 teaspoon granulated garlic
  • 0.66666668653488 cup reduced-sodium soy sauce
  • 0.33333334326744 cup water
  • 3 tablespoons rice vinegar
  • 3 tablespoons honey
  • 3 tablespoons coconut sugar
  • 2 tablespoons minced fresh ginger root
  • 1 (8 ounce) can pineapple rings
  • 3 tablespoons cornstarch
Instructions:
  • Heat up your Instant Pot® on Saute mode and add oil once it's hot.
  • Season pork chops with a flavorful blend of salt, garlic, and pepper. Sear them until beautifully golden on both sides in hot oil. Next, infuse the pork with a savory mixture of soy sauce, water, rice vinegar, honey, coconut sugar, ginger, and garlic. Stir everything together before turning off the Saute function.
  • Secure the lid tightly, choose high pressure setting following the manufacturer's guidelines, and program the cooker for 8 minutes. Give it 10 to 15 minutes for pressure to build up.
  • Follow the manufacturer's instructions to naturally release pressure for approximately 15 minutes. Carefully quick-release any remaining pressure for about 5 minutes. Unlock and remove the lid to unveil your creation.
  • Pour 1/3 cup of pineapple juice from the can into a small bowl, then whisk in cornstarch to create a slurry.
  • Take the pork chops out of the pot and cover them to maintain their warmth.
  • Pour the slurry into the pot with the liquid and stir well. Use the Saute function and cook while stirring until the sauce thickens, approximately 3 minutes. Place one pineapple ring on top of each pork chop in the sauce. Serve each pork chop with a pineapple slice and a drizzle of teriyaki sauce.
