Instant Pot® Teriyaki Shrimp: Quick and delicious dish with tender veggies, shrimp, and flavorful sauce served over hot rice for a speedy meal!
Ingredients:
  • 0.5 cup reduced-sodium soy sauce
  • 0.5 cup water
  • 0.25 cup rice vinegar
  • 2 tablespoons white sugar
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon garlic, minced
  • 1 teaspoon toasted sesame oil
  • 0.25 teaspoon ground white pepper
  • 1 pound raw shrimp
  • 2 small Zucchini, raw
  • 1 small head cauliflower, cut into small florets
  • 3 tablespoons cornstarch
  • 3 tablespoons water
  • 3 cups hot cooked rice, or as needed
  • 1 tablespoon sesame seeds, or to taste
Instructions:
  • In a multi-functional pressure cooker (such as Instant Pot®), mix soy sauce, water, vinegar, sugar, ginger, garlic, sesame oil, and pepper. Add shrimp, zucchini, and cauliflower. Seal the lid, select high pressure, and set timer for 0 minutes. Let pressure build for 10-15 minutes before serving.
  • Once the Instant Pot® reaches pressure, follow the manufacturer's instructions to safely release pressure using the quick-release method for about 5 minutes. Then unlock and remove the lid.
  • Simmer the vegetables and shrimp to your desired doneness for 1 to 2 minutes in "Sauté" mode, bringing the sauce to a gentle boil and stirring occasionally.
  • Combine cornstarch and water in a small bowl until smooth if needed. Simmer sauce using the Sauté function. Gradually whisk in cornstarch slurry using a wooden spoon or spatula until sauce thickens to desired consistency.
  • Adjust the seasonings to your liking, then plate the teriyaki shrimp over steaming rice, and optionally sprinkle with sesame seeds.
