Quick and flavorful Instant Pot® teriyaki chicken for busy weeknights.
Ingredients:
  • 0.5 cup soy sauce
  • 0.5 cup water
  • 0.5 cup brown sugar
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon mirin (Japanese sweet wine)
  • 1 tablespoon sake
  • 1 tablespoon minced garlic
  • 1 dash freshly cracked black pepper
  • 1 pound skinless, boneless chicken breast halves
Instructions:
  • Combine soy sauce, water, brown sugar, rice wine vinegar, mirin, sake, garlic, and pepper in a bowl, creating a flavorful sauce.
  • Add chicken to an Instant Pot®, pour over sauce, and lock the lid. Choose Meat function, set timer for 12 minutes, and wait for pressure to build for 10 to 15 minutes.
  • Carefully quick-release pressure following manufacturer's instructions, for about 5 minutes. Unlock and remove lid. Check chicken temperature with an instant-read thermometer; it should read at least 165°F (74°C). If not, cook for an additional 2 to 4 minutes.
  • Take the succulent chicken out of the pot and then chop it up or shred it. Combine it with the flavorful sauce from the pot.
