Instant Pot® beef teriyaki stir-fry bowls with a tropical twist from a pineapple juice marinade.
Ingredients:
  • 5 tablespoons brown sugar
  • 1 tablespoon tamari
  • 1 clove garlic, grated
  • 0.5 teaspoon ginger paste
  • 0.125 teaspoon onion powder
  • 1 tablespoon tapioca flour
  • 1 (8 ounce) thinly sliced carne asada (beef steak)
  • 1 tablespoon grapeseed oil
  • 1 pinch red pepper flakes
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 small yellow onion, quartered and sliced
  • 2 carrots, sliced diagonally
  • 14 ounces refrigerated chow mein noodles
  • 1 teaspoon everything bagel seasoning
  • 1 tablespoon chopped green onion, or to taste
Instructions:
  • Combine water, pineapple juice, brown sugar, tamari, garlic, ginger paste, and onion powder in a resealable bag. Set aside 1/2 cup of the marinade and mix in tapioca flour. Cut beef into 1-inch pieces and add to the bag with the marinade. Seal and refrigerate for 45 minutes.
  • Preheat a multi-functional pressure cooker like an Instant Pot® using the Saute function. Add oil, red pepper flakes, and sirloin pieces (without marinade). Cook until browned, about 5 to 7 minutes.
  • Add vibrant bell peppers, fragrant onion, and flavorful carrots to a steamer basket. Position the basket above the succulent meat. Press the Cancel button.
  • Seal the lid securely and choose high pressure per manufacturer's guidelines, then set the timer for 3 minutes. Let the pressure build for 10 to 15 minutes.
  • Follow the manufacturer's instructions to release pressure using the quick-release method for about 5 minutes. Unlock the lid and carefully take out the vegetable basket to set aside.
  • Turn on the Saute function and add the noodles, then pour in the reserved marinade with tapioca. Stir until the sauce thickens. Mix in the vegetables. Toss everything together. Serve in bowls immediately, and sprinkle with everything bagel seasoning and garnish with green onion.
