Hawaiian Beef Sliders with Pineapple Slaw

Beef burgers with pineapple slaw on Hawaiian slider buns for a sweet and crunchy treat.
Ingredients:
  • 0.5 cup chopped red bell pepper
  • 0.5 cup chopped green bell pepper
  • 0.5 cup chopped red onion
  • 2 teaspoons minced fresh garlic
  • 0.25 teaspoon liquid smoke
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame oil
  • 0.25 cup dry bread crumbs
  • 1.25 pounds 90%-lean ground beef
  • 1 pinch salt and ground black pepper to taste
  • 0.5 (8 ounce) can pineapple tidbits in juice
  • 6 ounces shredded cabbage
  • 1 green onion, sliced
  • 1 (12 count) package Hawaiian bread rolls (such as King's®)
  • 12 canned pineapple chunks
  • toothpicks
Instructions:
  • Preheat the oven to 400°F (200°C) and line a 12x18-inch sheet pan with parchment paper.
  • Add bell pepper pieces and chopped onion to a small food processor or blender. Pulse until finely chopped. Transfer the vegetables to a large mixing bowl and mix in the garlic.
  • In a small bowl, vigorously stir together liquid smoke, low-sodium soy sauce, rice vinegar, sesame oil, and egg. Add bread crumbs and mix until moistened. Combine with vegetables, ground beef, salt, and pepper. Use your hands to evenly blend all ingredients.
  • Shape the ground beef mixture into twelve 3-inch patties and arrange them evenly on the baking sheet.
  • Cook in the preheated oven for 8 to 10 minutes on each side, or until cooked to your liking.
  • As the patties bake, whip up the pineapple slaw. Drain pineapple tidbits, saving 1 tablespoon of the juice. Mix pineapples, shredded cabbage, and green onions in a salad bowl.
  • Combine the mayonnaise, rice vinegar, reserved pineapple juice, salt, and pepper in a bowl to create the dressing. Mix the pineapple slaw with the dressing.
  • Layer cooked patties on the bottom halves of sliced Hawaiian bread rolls. Top each patty with 2 to 3 tablespoons of pineapple slaw. Cover with the remaining roll halves. Finish by garnishing each slider with a pineapple chunk secured with a toothpick.
