Instant Pot® Dijon Pork Chops

"Instant Pot® Dijon pork chops: Quick, easy, and guaranteed to be a dinner favorite!"
Ingredients:
  • 1 teaspoon dried thyme
  • 4 (1-inch thick) bone-in pork chops
  • 1 tablespoon olive oil
  • 0.5 cup dry white wine
  • 0.5 cup low-sodium chicken stock
  • 4 tablespoons unsalted butter
  • 3 tablespoons chopped fresh flat-leaf parsley
Instructions:
  • Mix together the salt, pepper, and thyme in a small bowl. Season both sides of the pork chops with the spice mixture, making sure to rub and press it in.
  • Preheat a multi-functional pressure cooker, like an Instant Pot®, using the Saute function. Add olive oil and once hot, sear pork chops for 3 minutes on each side until golden brown. Set the chops aside. Pour in wine and chicken stock to deglaze the pan, letting the liquid simmer for about 3 minutes to reduce slightly and let the alcohol cook off. Turn off the Saute function.
  • Add the chops back to the pot, lock the lid, and set the pressure valve to sealing. Choose Manual high pressure per the manufacturer's instructions, then set the timer for 5 minutes, giving 10 to 15 minutes for pressure to build.
  • Follow the manufacturer's instructions to naturally release pressure for about 10 minutes. Then, carefully quick-release pressure for about 5 minutes. Unlock and remove the lid, then transfer the pork chops to a plate and tent with foil to keep warm.
  • Activate the Saute function and cook for roughly 1 minute to thicken the liquid. Mix in Dijon mustard and garlic powder. Slowly blend in butter until fully combined, taking about 3 minutes. Return pork chops to the pot and coat them with the flavorful sauce.
  • Sprinkle with freshly chopped parsley and present beautifully.
