Instant Pot Pork Loin in Cranberry-Dijon Sauce

Instant Pot pork loin with Dijon-cranberry sauce, served with sweet potatoes and veggies.
Ingredients:
  • 1 pound boneless pork loin roast
  • salt and pepper to taste
  • 1 tablespoon butter
  • 1 (14 ounce) can whole cranberry sauce
  • 0.5 yellow onion, sliced
  • 2 tablespoons Dijon mustard
  • 2 tablespoons chopped fresh tarragon
  • 1 packet dry onion soup mix
  • 1 tablespoon cornstarch
Instructions:
  • Ensure the pork loin is dry, then generously season all sides with salt and pepper.
  • Preheat your Instant Pot on the Saute function. Melt the butter, then sear the pork loin on all sides until lightly browned, about 1 minute per side. Turn off Saute function and add cranberry sauce, sliced onion, Dijon mustard, tarragon, and dry onion mix. Gently mix and spoon the sauce over the pork loin.
  • Seal the lid tightly, choose high pressure per manufacturer's instructions, and set timer for 9 minutes. Let pressure build for 10 to 15 minutes.
  • Wait for the pressure to release naturally following the manufacturer's guidelines for around 10 minutes. Use an instant-read thermometer to check the internal temperature of the pork loin - it should register a minimum of 180 degrees F (82 degrees C) when inserted into the center. Keep in mind that the temperature will increase slightly even after removing the pork loin from the pot.
  • Allow the dish to rest on a cutting board for 8 to 10 minutes before slicing thinly.
  • Once the pork loin is resting, switch back to the Saute function and incorporate cornstarch into the sauce. Whisk until the sauce thickens, which should take about 2 to 5 minutes. Serve the pork loin with the cranberry-Dijon sauce.
