"Quick and delicious Instant Pot pork loin with white beans, salsa, and beer."
Ingredients:
  • 1 (3 pound) pork loin
  • salt and ground black pepper to taste
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon onion powder
  • 2 tablespoons olive oil
  • 1 cup beer
  • 2 Spices, bay leaf
  • 2 (15.5 ounce) cans cannellini beans, drained and rinsed
  • 1.5 cups salsa
Instructions:
  • Season the pork loin generously with a mixture of chili powder, cumin, onion powder, salt, and pepper on all sides.
  • Heat olive oil in the pressure cooker on the Saute function. Cut pork loin in half if needed to fit in the pot. Brown each side for approximately 5 minutes. Set aside.
  • Add beer to the pot and use it to deglaze, making sure to scrape up all the flavorful browned bits. Place the pork loin back in the pot, then layer bay leaves on top. Add cannellini beans followed by salsa on top. Seal the lid securely and choose the high-pressure setting as per the manufacturer's guidelines. Set the timer for 20 minutes and allow the pressure to build for 10 to 15 minutes.
  • Follow the manufacturer's instructions for natural pressure release for 15 to 20 minutes. Remove the lid and slice, chop, or shred the pork. Serve with the beans.
