Instant Pot stew with Hatch green chiles, pork loin, pancetta, potatoes, and sweet corn - bursting with bold flavors.
Ingredients:
  • 0.25 pound diced pancetta
  • 1 pound boneless pork loin, cubed
  • 0.25 cup diced onion
  • 0.25 cup diced shallot
  • 0.5 tablespoon olive oil
  • 2 medium white potatoes, peeled and cubed
  • 0.33333334326744 cup roasted Hatch green chiles, seeds and skin removed, chopped
  • 1.5 cups frozen corn kernels
  • 1.5 cups chicken stock
  • ground black pepper to taste
  • 0.5 cup half-and-half
Instructions:
  • Preheat a multi-functional pressure cooker like an Instant Pot on the Saute setting. Sear pancetta for 1 minute, then add cubed pork loin, onion, and shallot. Saute until pork loin browns slightly and onion begins to clarify, about 2 more minutes. If needed, add olive oil to loosen any stuck pork or onion bits.
  • Mix in the potatoes and chiles and sauté for 5 minutes. Incorporate the corn, chicken stock, salt, and pepper, then switch off the Saute mode.
  • Secure the lid tightly and engage high pressure following the manufacturer's guidelines; then, program the timer for 35 minutes. Give it 10 to 15 minutes for the pressure to build up.
  • Carefully release pressure naturally following the manufacturer's instructions for about 15 minutes, then unlock and remove the lid before selecting Saute mode.
  • Uncover the pot and add half-and-half. Simmer until warm, about 5 to 7 minutes. Season with salt and pepper to taste.
