Instant Pot Pork Adobo: Succulent meat and savory sauce served over fluffy rice.
Ingredients:
  • 2 tablespoons olive oil
  • 1 pound boneless pork roast, cubed
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 1 cup water
  • 0.5 cup reduced-sodium soy sauce
  • 0.5 cup white vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 bay leaf
  • 1 tablespoon tapioca starch
Instructions:
  • Preheat a multi-functional pressure cooker like an Instant Pot using the Saute function. Add oil and pork pieces once hot. Sear until browned, approximately 5 minutes. Saute onion until soft and translucent, about 3 to 5 minutes. Stir in garlic and cook until fragrant, around 30 seconds. Incorporate water, soy sauce, vinegar, sugar, salt, pepper, and bay leaf. Stir well and deactivate Saute mode.
  • Securely seal the lid and activate high pressure as per manufacturer's guidelines. Cook for 15 minutes and wait for 10 to 15 minutes for pressure to build up.
  • Allow the pressure to release naturally following the manufacturer's guidelines, for 10 to 40 minutes. Transfer the pork to a medium bowl to keep warm. Carefully discard half of the liquid and set aside the rest.
  • Reheat Saute mode. Mix tapioca starch into the hot liquid in the pot to create a thick slurry. Simmer until sauce thickens, around 5 minutes. If needed, incorporate reserved liquid gradually, 2 tablespoons at a time, until reaching the desired consistency.
