Instant Pot Smothered Pork Chops

Prep and freeze these Instant Pot pork chops for a hassle-free weeknight dinner.
Ingredients:
  • 4 (1-inch thick) pork chops
  • 1 teaspoon seasoned salt
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon butter
  • 1.5 cups vegetable broth
  • 0.25 cup sour cream
Instructions:
  • Rub the pork chops with a flavorful blend of garlic powder, seasoned salt, oregano, onion powder, and pepper.
  • Preheat a multi-functional pressure cooker, like an Instant Pot, on the Sauté setting. Melt butter in the pot. Sear pork chops until golden and crisp, about 2 to 3 minutes per side, working in batches if needed. Transfer chops to a plate. Deglaze the pot by pouring in vegetable broth and scraping up the flavorful browned bits with a wooden spoon.
  • Place a trivet in the bottom of the inner pot and layer the pork chops on top to ensure the seasoning stays intact. Seal the lid, set the pressure valve to Sealing, and cook on high pressure for 8 minutes following the manufacturer's guidelines. Let the pressure naturally release for 10 to 15 minutes.
  • Allow the pressure to naturally release for a minimum of 10 minutes following the manufacturer's guidelines. Take out the pork chops and set aside to rest as you prepare the gravy.
  • Initiate the Sauté function on the Instant Pot. Blend sour cream into the broth and let the mixture simmer, stirring occasionally, until the gravy reduces by half and thickens, which should take around 10 to 15 minutes. Then, pour the thickened gravy over the chops and enjoy your meal.
