Instant Pot BBQ chicken thighs: tender, juicy, and hassle-free for when grilling isn't an option.
Ingredients:
  • 1 tablespoon vegetable oil
  • 2 pounds skin-on, bone-in chicken thighs
  • 0.5 cup chicken stock
  • 2 stalks celery, chopped
  • 1 cup barbecue sauce, divided
Instructions:
  • Preheat your multi-functional pressure cooker, like an Instant Pot, using the Saute function. Heat oil until sizzling. Cook chicken thighs until nicely browned, about 3 minutes on each side. Transfer chicken to a plate.
  • Pour the chicken broth into the pot and use a wooden spoon to deglaze, scraping up the brown bits for about 1 minute. Turn off the Instant Pot® and add the celery, 1/2 cup of barbecue sauce, and the browned chicken thighs. Stir everything together to combine.
  • Securely fasten the lid and set the pressure to high as per the manufacturer's guidelines. Set the timer for 8 minutes and wait for 10 to 15 minutes for pressure to build.
  • Position the oven rack 6 inches below the heat source and preheat the broiler on low.
  • After cooking, safely release pressure using the quick-release method as directed by the manufacturer for about 5 minutes. Open the lid, place the chicken on a baking sheet, and brush it with the remaining 1/2 cup of barbecue sauce.
  • Broil until golden and crisp, about 5 minutes.
