Make delicious pulled chicken in the Instant Pot, no grilling needed. Serve on buns with BBQ sauce.
Ingredients:
  • 2 teaspoons kosher salt
  • 1.5 teaspoons smoked paprika
  • 0.5 teaspoon onion powder
  • 2.5 pounds skinless, boneless chicken breasts, or more to taste
  • 1 cup water
  • 1 teaspoon hickory-flavored liquid smoke
  • 10 hamburger buns, or as needed
  • 1 cup barbeque sauce
Instructions:
  • Combine salt, paprika, garlic powder, onion powder, and pepper in a bowl. Cut chicken into 3- to 4-inch pieces and place in a large resealable plastic bag. Sprinkle the seasoning over the chicken in the bag. Seal the bag and shake to coat the chicken evenly.
  • 1. Fill your Instant Pot® with water and insert the wire rack. 2. Add the chicken on the rack. 3. Seal the lid securely and set the Meat/Poultry function for 50 minutes. 4. Let the pressure naturally build for 10 to 15 minutes.
  • Allow the pressure to naturally release for around 10 minutes following the manufacturer's guidelines.
  • Place the cooked chicken in a bowl and shred it using 2 forks. Mix in 1/2 cup of liquid from the pot along with liquid smoke, ensuring it's well combined. Serve the shredded chicken on buns and drizzle with barbeque sauce.
