Easy Instant Pot® pulled pork ragu: Rich, succulent sauce for perfect pasta.
Ingredients:
  • 1.5 pounds pork tenderloin
  • 2 teaspoons salt
  • 0.5 teaspoon ground black pepper
  • 3 cloves garlic, crushed
  • 1 tablespoon olive oil
  • 1 (28 ounce) can canned crushed tomatoes
  • 1 (7 ounce) jar roasted red peppers, drained and chopped
  • 1 tablespoon chopped fresh parsley
  • 2 sprigs fresh thyme
  • 2 bay leaves
Instructions:
  • Season pork generously with salt and pepper. Heat the multi-functional pressure cooker on Saute mode. Sauté garlic in olive oil for 3 minutes. Brown the pork on both sides for about 2 minutes each. Stir in tomatoes, peppers, parsley, thyme leaves, and bay leaves, then seal the lid. Cook on high pressure for 45 minutes per manufacturer's instructions. Let pressure naturally release for 10-15 minutes.
  • Follow the manufacturer's instructions for natural pressure release for 10 to 40 minutes. Remove and discard bay leaves, then shred pork using 2 forks.
