"Create mouthwatering Instant Pot BBQ pulled pork for irresistible family sandwiches."
Ingredients:
  • 1 tablespoon smoked paprika
  • 1.5 teaspoons firmly packed light brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 pounds boneless pork loin roast, cut into 1-inch cubes
  • 1.5 cups barbecue sauce
  • 1 cup water
  • 8 Hawaiian bread rolls (such as King's®), split
Instructions:
  • In a large glass or ceramic bowl, combine paprika, brown sugar, garlic powder, salt, and pepper. Add pork and coat evenly. Cover the bowl with plastic wrap and refrigerate for 30 minutes to marinate.
  • Preheat Instant Pot on Sauté mode with oil. Brown pork in batches for 5 to 7 minutes.
  • Add the pork back to the pot, then pour in barbecue sauce and water. Lock the lid, select the Manual function, and set the timer for 60 minutes. Let the pressure build for 10 to 15 minutes.
  • Follow the manufacturer's instructions for natural pressure release for 10 to 40 minutes. Open the lid, carefully unlock, and transfer the pork to a separate plate.
  • Choose the Sauté setting once more and let the sauce thicken for approximately 10 minutes.
  • Shred the pork using two forks while the sauce is simmering.
  • Combine the pork back into the pot, ensuring it is well mixed. Serve the succulent pork along with the flavorful sauce on rolls.
