Elevate your pulled pork with a flavorful blend of soy sauce, hoisin sauce, and Chinese 5-spice in the pressure cooker. Ideal for tacos, sandwiches, or steamed buns.
Ingredients:
  • For the pulled pork:
  • 2 1/2 teaspoons Chinese Five-Spice Powder
  • 3 to 3 1/2 pounds pork shoulder, cut into large chunks (3- to 4-inch pieces)
  • 1/3 cup water
  • 1/4 cup hoisin sauce
  • 3 tablespoons soy sauce
  • 3 tablespoons honey
  • 2 tablespoons dry sherry
  • 1 tablespoon cooking oil (I like avocado oil)
  • 5 cloves garlic, minced
  • 2-inch (1-ounce) piece ginger, minced
  • To serve:
  • 2 scallions, sliced thinly
  • Hamburger or slider buns
Instructions:
  • Enhance the pork: Evenly sprinkle the spice blend over the pork chunks, ensuring they are fully coated on all sides.
  • Create the sauce by whisking water, hoisin sauce, soy sauce, honey, and sherry in a small bowl.
  • In your electric pressure cooker, heat oil using the “Sauté” setting. Sauté the garlic and ginger until fragrant, about 1 to 2 minutes, ensuring the garlic does not brown.
  • Place seasoned pork pieces in a single layer in the pressure cooker using tongs. Pour sauce on top, secure the lid, set to high pressure for 55 minutes, and ensure the pressure regulator is set to “Sealing.”
  • Release the pressure: Carefully switch the vent from "Sealing" to "Venting" for a quick release or allow the pot to depressurize naturally for approximately 20 minutes.
  • Remove the pork from the cooking liquid: Transfer the pork to a large platter or sheet pan using tongs. Carefully remove the inner pot from the pressure cooker using heatproof mitts, pour the cooking liquid into a fat separator, then return the liquid to the pot. (If a fat separator is not available, allow the cooking liquid to sit for 10 minutes until the fat rises to the top, then use a skimmer to remove as much fat as possible.)
  • Return the pot to the pressure cooker and select the “Sauté” program to rapidly simmer the cooking liquid for 10 minutes, reducing it.
  • Shred the pork using two forks while the liquid reduces.
  • Mix the shredded pork back in with the flavorful reduced liquid and ensure the pork is evenly coated. If needed, add a tablespoon or two of the reserved fat for moisture.
  • Garnish the pulled pork with a sprinkle of fresh scallions before serving.
