Ingredients:
  • 2 full racks (3 to 4 pounds) pork baby back ribs
  • About 1/3 cup dry rub for pork, store-bought or homemade
  • 3/4 cup water
  • 3/4 cup apple cider vinegar
  • 1/2 teaspoon liquid smoke (optional)
  • 2 cups barbecue sauce, your favorite store-bought or homemade
Instructions:
  • Prepare the ribs by using a paring knife to remove the thin membrane inside each rack. Peel it off in one piece for easier slicing and serving.
  • Coat the ribs generously on all sides with the flavorful dry rub mixture. For best results, consider refrigerating and allowing the flavors to meld overnight.
  • Prepare the ribs for cooking in your Instant Pot by placing foil balls or a rack at the bottom to elevate the ribs. Pour in water, vinegar, and optionally liquid smoke. Arrange the ribs by bending them if needed to fit. You can cook 2 racks of baby back ribs in a 6-quart Instant Pot. Seal the Instant Pot and pressure cook on high for 30 minutes, then allow natural pressure release for 10 minutes before releasing any remaining pressure.
  • For crispy ribs: Transfer the ribs from the Instant Pot to a baking sheet, generously coat with barbecue sauce, then broil on high for 5 minutes. Slice and serve with sides and extra sauce. To reheat leftovers, tightly wrap in foil and bake at 350°F for about 15 minutes until heated through, or grill for 10-15 minutes on medium heat. Enjoy with more sauce on the side!
