Instant Pot® creamy chicken stew: the ultimate comfort food.
Ingredients:
  • 2 tablespoons salted butter
  • 2 pounds boneless, skinless chicken thighs, or more to taste
  • 3 medium carrots, sliced
  • 1 medium onion, diced
  • 2 stalks celery, chopped
  • 2 cups chicken broth, divided
  • 4 cups diced potatoes
  • 2 tablespoons gluten-free all-purpose flour
  • 1 tablespoon Worcestershire sauce
  • 2 large bay leaves
  • 1 teaspoon poultry seasoning
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon freshly ground black pepper
  • 0.5 teaspoon dried rosemary
  • 1 cup heavy cream
  • 0.5 cup frozen peas
Instructions:
  • Preheat your Instant Pot® on Saute mode with butter. Sear chicken thighs in the butter for 4 to 5 minutes per side until golden brown. Set chicken aside.
  • Sauté carrots, onion, and celery until onions start to soften, approximately 5 minutes. Add garlic and cook until aromatic, about 1 minute. Deglaze the pot by stirring in 1/2 cup of chicken broth.
  • Return chicken thighs to the pot along with the rest of the chicken broth, potatoes, flour, Worcestershire sauce, bay leaves, poultry seasoning, thyme, pepper, rosemary, and salt. Mix well, then seal the lid securely.
  • Adjust to high pressure following the manufacturer's directions, then set the timer for 10 minutes. Let pressure build for 10 to 15 minutes.
  • Follow the manufacturer's instructions for natural-release for 10 minutes, then carefully quick-release any remaining pressure for about 5 minutes. Unlock and remove the lid.
  • Take out the chicken from the pot and shred or cut it into bite-sized pieces. Put the chicken back into the pot and throw away the bay leaves.
  • First, heat up the cooker by selecting the Saute function. Pour in the heavy cream and bring it to a gentle boil. Next, introduce the frozen peas into the bubbling stew and let them cook, giving an occasional stir, until they are heated through, which should take around 5 minutes.
