Smoky Cajun chicken and spicy jalapeno sausage jazz up a creamy bow tie pasta skillet with veggies.
Ingredients:
  • 1 skinless, boneless chicken breast half
  • 0.5 teaspoon Cajun seasoning, or to taste
  • 1 link pork sausage with jalapeno pepper
  • 4 ounces farfalle (bow tie) pasta
  • 1 green bell pepper, chopped
  • 0.5 red bell pepper, chopped
  • 0.5 onion, chopped
  • 1 clove garlic, chopped
  • 1.5 cups fat-free half-and-half, divided
  • 1 tablespoon cornstarch, or as needed
  • 1 pinch Cajun seasoning, or to taste
  • 1 pinch dried basil, or to taste
Instructions:
  • Get your outdoor grill ready by preheating it to medium-high heat and giving the grate a light coating of oil to prevent sticking.
  • Season both sides of the chicken breast generously with 1/2 teaspoon of Cajun seasoning, adjusting to your taste preference.
  • Grill the chicken breast and pork sausage on a preheated grill until nicely browned and cooked through, about 5 minutes per side. Place them on a plate to rest for 5 minutes, then dice into bite-size pieces.
  • 1. Boil a generously salted large pot of water. Add farfalle pasta and cook it until al dente, stirring occasionally, for about 12 minutes. Drain the pasta.
  • In a large skillet, melt butter over medium heat. Sauté green bell pepper, red bell pepper, onion, and garlic in the butter until slightly softened, about 2 to 3 minutes. Add chicken and sausage, lower heat to medium-low, and pour in 1 cup of half-and-half. Mix well.
  • Combine cornstarch with the 1/2 cup half-and-half until smooth in a small bowl. Pour the mixture into the skillet and stir until the sauce simmers and thickens (about 5 minutes). Add the cooked farfalle pasta and coat it with the sauce. Finally, season with more Cajun seasoning and dried basil to taste.
