One-Pot Cajun Chicken and Sausage Alfredo Pasta

Savory Cajun Alfredo with chicken, sausage in one pot.
Ingredients:
  • 1 pound chicken, cut into bite-sized pieces
  • 0.5 teaspoon kosher salt
  • freshly ground black pepper to taste
  • 4 tablespoons extra-virgin olive oil
  • 14 ounces smoked sausage, sliced on the diagonal
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1.25 cups heavy cream
  • 2 cups dried penne pasta
  • 1.5 tablespoons Cajun seasoning, plus more to taste
  • 0.5 cup freshly shredded Parmesan cheese
  • 1 tablespoon minced Italian flat-leaf parsley
Instructions:
  • Season the chicken generously with salt and pepper. In a large covered cooking pot, warm up the olive oil over medium-high heat. Saute the chicken in the hot oil until it turns golden brown, for about 5 to 7 minutes.
  • Brown the sausage in the pot for about 5 minutes. Cook garlic for 2 minutes in the same pot. Combine chicken broth, heavy cream, pasta, and Cajun seasoning in the pot. Simmer over medium-high heat for about 5 minutes until well combined.
  • Cover the pot, lower the heat, and gently simmer until the pasta is tender, for about 15 to 20 minutes.
  • Take the pot off the heat and stir in Parmesan cheese, followed by chopped parsley. Feel free to add more Cajun seasoning for extra flavor.
