Southern Dirty Rice: Flavorful blend of beef, sausage, chicken livers, and Cajun seasonings mixed with white rice in one pot.
Ingredients:
  • 2.5 cups long-grain rice
  • 2 teaspoons butter, or more to taste
  • 0.25 pound ground beef
  • 0.25 pound bulk country sausage
  • 0.25 pound chicken livers, minced
  • 0.5 cup diced onion
  • 0.33333334326744 cup diced celery
  • 0.25 cup diced green bell pepper
  • 2 cloves minced garlic
  • 2.5 cups chicken stock
  • 2.5 cups water
  • 2 tablespoons chopped fresh parsley, or more to taste
  • 2 tablespoons Cajun seasoning
  • 2 large bay leaves
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground thyme
  • 1 teaspoon cayenne pepper
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and rinse the rice in a wire mesh strainer until the water runs clear. Then, drain and set aside.
  • In a large, oven-proof casserole, melt butter over medium-high heat. Add ground beef, country sausage, and chicken livers. Cook and stir until browned, about 5 to 7 minutes. Leave a small amount of grease in the casserole, then drain.
  • Sauté the onion, celery, and bell pepper with the meat until translucent, approximately 5 minutes. Add garlic and sauté for another 30 seconds. Mix in the rice, chicken stock, water, 2 tablespoons parsley, Cajun seasoning, bay leaves, salt, pepper, thyme, and cayenne. Cover with foil.
  • After baking in the preheated oven for 40 minutes, take out the dish, uncover, and discard the foil. Remove the bay leaves, give it a good stir, and serve right away with a sprinkle of fresh parsley on top.
