One-pot penne bolognese: Quick, easy, and veggie-packed family favorite!
Ingredients:
  • 1 brown onion, thinly sliced
  • 500g pasta sauce with garden vegetables
  • 750ml chicken stock
  • 300g Brand penne pasta
  • 60g pea
  • 20g parmesan
  • Basil leaves, to granish
  • Mixed salad leaves, to serve
Instructions:
  • In a large heavy-based saucepan over medium-high heat, heat the oil. Add the onion and cook, stirring, until just softened, about 4 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the mince and cook, breaking up any lumps with a wooden spoon, until browned, about 5 minutes. Stir in the pasta sauce, tomatoes, and stock. Bring to a boil, then season to taste.
  • Lower the heat to medium and mix in the pasta. Cook for 20 minutes, stirring occasionally, until the pasta is just tender. Add in the peas and cook for an additional 2 minutes until tender. Sprinkle parmesan and basil on top of the pasta, then serve with mixed salad leaves.
