One-pot pasta with pine nuts and crispy beans for added texture.
Ingredients:
  • 350g penne rigate
  • 300g green beans, trimmed, cut into 2cm lengths diagonally
  • 1 large bought roasted red capsicum, deseeded, cut into thin strips
  • 45g (1/4 cup) toasted pine nuts
  • 99.00 gm bought basil pesto
  • 20.00 ml balsamic vinegar
  • 125.00 ml fresh basil leaves
  • 90g (1/3 cup) fresh ricotta, crumbled
Instructions:
  • Boil pasta in salted water until al dente following package instructions. Add beans for last 2 minutes. Drain and return to pan.
  • Toss in the capsicum, pine nuts, pesto, vinegar, and most of the basil with the pasta, gently combining. Season with salt and pepper to taste.
  • Serve the pasta mixture in bowls, then add a dollop of ricotta. Finish with a sprinkling of the remaining basil before serving right away.
