Penne with Chicken and Pesto

Creamy pesto chicken pasta: Penne tossed in a luscious blend of cream, pesto, and Parmesan.
Ingredients:
  • 1 (16 ounce) package penne pasta
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 skinless, boneless chicken breast halves - cut into thin strips
  • 2 cloves garlic, minced
  • salt and pepper to taste
  • 1.25 cups heavy cream
  • 0.25 cup pesto
  • 3 tablespoons grated Parmesan cheese
Instructions:
  • Bring a generously salted pot of water to a vigorous boil. Add pasta and cook until al dente, about 8 to 10 minutes. Drain well.
  • In a large skillet over medium heat, melt butter with olive oil. Sauté chicken and garlic until chicken is nearly done. Lower the heat, add salt, pepper, cream, pesto, and Parmesan cheese. Cook until chicken is fully cooked. Mix in cooked pasta.
