One-pot spicy jambalaya with chicken, andouille sausage, rice, and Cajun spices for a quick and flavorful meal.
Ingredients:
  • 2 tablespoons peanut oil, divided
  • 1 tablespoon Cajun seasoning
  • 10 ounces andouille sausage, sliced into rounds
  • 1 pound boneless skinless chicken breasts, cut into 1 inch pieces
  • 1 onion, diced
  • 1 small green bell pepper, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 (16 ounce) can crushed Italian tomatoes
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon salt
  • 0.5 teaspoon hot pepper sauce
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon file powder
  • 1.25 cups uncooked white rice
  • 2.5 cups chicken broth
Instructions:
  • Prepare all your ingredients.
  • In a large heavy Dutch oven over medium heat, warm up 1 tablespoon of peanut oil. Season the sausage and chicken pieces with Cajun seasoning, then sauté the sausage until golden brown. Remove using a slotted spoon and set aside.
  • Heat up a tablespoon of fragrant peanut oil in the pan and brown the chicken pieces until they are golden all over. Take them out of the pan and keep them to the side using a slotted spoon.
  • In a single pot, cook the onion, bell pepper, celery, and garlic until they're tender and fragrant.
  • Add crushed tomatoes to the mixture and season with red pepper, black pepper, salt, hot pepper sauce, Worcestershire sauce, and filé powder for a burst of flavor.
  • Add the chicken and sausage to the pot, letting them mingle with the flavors. Simmer for 10 minutes, giving it an occasional stir to enhance the rich taste.
  • Combine the rice and chicken broth, gently incorporating them together.
  • Bring to a lively boil, then lower the heat and gently simmer for 20-25 minutes until all the liquid is soaked up.
  • Savor and indulge!
