Irresistible rhubarb cobbler dessert - a must-try for rhubarb skeptics! Enjoy hot or cold.
Ingredients:
  • 3 cups all-purpose flour
  • 1.5 cups brown sugar
  • 1 cup butter, softened
  • 4 eggs
  • 0.25 cup all-purpose flour
  • 1.5 cups white sugar
  • 1 cup half-and-half
  • 0.5 teaspoon salt
  • 4 cups chopped rhubarb
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a 9x13-inch baking dish.
  • Combine 3 cups of flour and brown sugar in a large bowl, then use a knife or pastry blender to cut in softened butter until the mixture resembles coarse crumbs. Set aside 1 1/2 cups of the flour mixture, then press the remaining mixture into the bottom of the prepared pan.
  • Place in the oven and bake until the crust is golden brown, approximately 15 minutes.
  • In a large bowl, whisk eggs until fluffy; stir in 1/4 cup of flour, white sugar, half-and-half, and salt until the mixture is smooth.
  • Sprinkle chopped rhubarb over the baked crust, then pour the egg mixture over it and top with the reserved flour mixture.
  • Bake in the hot oven until the eggs are cooked through and golden brown, for 40 to 45 minutes.
