Delicious bars with cinnamon shortbread crust, fruity sweet-tart filling, and crunchy oat crumb topping - taste the best of early summer!
Ingredients:
  • 0.5 cup brown sugar, packed
  • 2 cups all-purpose flour
  • 0.5 cup packed brown sugar
  • 0.5 teaspoon ground cinnamon
  • 1 cup unsalted butter
  • 4 eggs
  • 2 cups white sugar
  • 0.5 cup flour
  • 4 cups diced rhubarb
  • 2 cups sliced strawberries
  • 1 cup blueberries
  • 0.5 cup rolled oats
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 13x9-inch baking dish.
  • Combine 2 cups of flour, 1/2 cup of brown sugar, and 1/2 teaspoon of cinnamon in a bowl. Incorporate 1 cup of unsalted butter into the mixture until crumbly, then press it into the bottom of a prepared baking dish.
  • Bake the crust in a hot oven until beautifully golden for about 15 minutes.
  • In a blender, combine eggs, white sugar, 1/2 cup of flour, and salt until smooth. Transfer the mixture to a large bowl and gently mix in rhubarb, strawberries, and blueberries. Spread the fruit mixture over the baked crust.
  • Combine 1/2 cup flour, 1/2 cup brown sugar, oats, melted butter, and 1/2 teaspoon cinnamon in a bowl, then sprinkle over the fruit mixture.
  • Bake in a preheated oven until the top is lightly browned and the filling is set, about 45 to 50 minutes.
