Very Berry Shortcakes

Easy Bisquick® shortcakes layered with fresh strawberries for a delicious, very berry dessert!
Ingredients:
  • 1 quart (4 cups) whole strawberries
  • 1/2 cup sugar
  • 2 1/3 cups Bisquick™ Original baking mix
  • 1/2 cup half-and-half
  • 3 tablespoons sugar
  • 3 tablespoons margarine or butter, soft enough to spread
  • 2 tablespoons Bisquick™ Original baking mix
  • 1 cup frozen (thawed) whipped topping
Instructions:
  • Place the strawberries in a colander, rinse under cool water, and gently pat dry with paper towels.
  • Prepare the strawberries by hulling and cutting them into bite-size pieces on a cutting board. Transfer the strawberries to a medium bowl.
  • Sprinkle 1/2 cup of sugar over the strawberries and delicately mix with a wooden spoon. Cover the bowl with plastic wrap and chill in the refrigerator.
  • Preheat the oven to 425°F. In a large bowl, combine 2 1/3 cups of baking mix, half-and-half, 3 tablespoons of sugar, and margarine. Stir with a wooden spoon until a soft dough forms for the shortcakes.
  • Sprinkle baking mix over a clean surface. Place dough on the surface and gently knead by rolling, folding, and pushing for 10 repetitions until well combined.
  • Flatten the dough to a 1/2 inch thickness using a rolling pin or your hands. Optionally use a ruler to measure. Dip the cookie cutter in a bit of baking mix and cut out the dough. Transfer the shapes to a cookie sheet without greasing it.
  • Bake the shortcakes for 12 to 15 minutes until golden brown. Carefully remove them from the oven using pot holders, then transfer to a wire cooling rack to cool before adding toppings.
  • 1. Slice the shortcakes horizontally to create a top and a bottom. Place the shortcake bottoms on dessert plates. 2. Spread a layer of strawberries over the shortcake bottoms. 3. Add the shortcake tops on top of the strawberries. 4. Finish by topping with the remaining strawberries and a dollop of whipped topping.
