Best Brined Turkey Breast

Transform your Thanksgiving turkey with a flavorful and moist brined turkey breast that will wow your guests. The extra prep time is worth it for the juicy results!
Ingredients:
  • 9 cups water
  • 1/2 cup salt
  • 1/2 cup sugar
  • 1 bone-in whole turkey breast (4 to 6 pounds), thawed if frozen
  • 1 onion, cut into eighths
  • 2 fresh rosemary sprigs
  • 4 fresh thyme sprigs
  • 3 dried bay leaves
  • 6 tablespoons butter or margarine, melted
  • 1/4 cup dry white wine or Progresso™ chicken broth (from 32-oz carton)
Instructions:
  • Combine water, salt, and sugar in a 6-quart container or stockpot, stirring until sugar and salt are fully dissolved. Add turkey, cover, and refrigerate for at least 12 hours, but no more than 24 hours.
  • Preheat the oven to 325°F. Take the turkey out of the brine, wash it well under cold running water, and dry it gently.
  • Place the onion in the center of a large shallow roasting pan, then sprinkle with rosemary, thyme, and bay leaves. Put the turkey on top, skin side up, over the onion and herbs.
  • Mix butter and wine in a small bowl. Soak a 16-inch square of cheesecloth in the butter mixture until fully saturated, then use it to cover the turkey entirely. Roast for 1 hour and 30 minutes.
  • Take out the cheesecloth. Put the onion and herbs in the pan with drippings if you're making gravy, or discard them. Insert an ovenproof meat thermometer into the thickest part of the turkey, ensuring it doesn't touch the bone. Flip the turkey so the skin side is down. Roast for an additional 30 to 60 minutes, or until the thermometer shows 165°F.
